New Tipped Employee Wage and Hour Guidance

What if one of your employees performs work where they customarily and regularly receive tips for 5 hours, but then helps out with back of the house work that does not generate tips for another 3 hours? How do you pay this person? What happens when one of your managers receives a tip for their excellent service, can they keep it? It is imperative that these scenarios are addressed properly and it is not as simple as yes or no.
